




It could also be called "Latke Quiche". Last night, feeling lazy and sluggish, I decided to make good use of my time. I wanted to use up all the leftovers from my fridge before leaving for the weekend. So, I assembled them: butter (expired yesterday), mozzarella, apple, potato, red onion, milk, eggs. And then I thought! Aha! It's going to be like a Latke! How tasty!
How wrong I was. I fried the red onions and put those on the crust first. Then layered thin slices of potato, apple, and mozzarella. It looked excellent. Then I poured milk and eggs over the top and baked in a 375 oven for 45 minutes. The mozzarella was golden brown. It smelled divine. However, it was probably the worst tasting quiche I've ever had. The apples were tasteless and mushy, the potatoes and mozzarella were a terrible combo. The crust was okay.
I'm debating-- should I give it to the homeless? Or is that an insult? It sure looks good.
Ah well, not every adventure in the kitchen turns out well.
